So pasta is one of those things that every time I have it, I wonder why I don’t have it more! Sunday of the long weekend just gone (why thank you Canberra for having a Birthday) I spent the morning browsing the Bus Depot Markets and decided to make pasta with sun-dried tomatoes, chicken, basil and Parmesan for dinner. So simple I have never taken the time to write the recipe down, but here it is, apologies if the measurements are a little vague!
Ingredients
1/3 cup chicken stock (I always use the liquid variety when making this)
600ml cream
About a cup of Parmesan cheese
A bunch of basil (leaves only)
250-300g‘s chicken breast or tenderloins (depends if you like lots of chicken or not)
1/2 a large jar of sun-dried tomatoes
1/2 tablespoon of oil
1. Finely chop the basil leaves and cut the sun-dried tomatoes into quarters
2. Cut the chicken into bite sized pieces and cook in oil on a medium heat until cooked through, set aside when cooked
3. In the same pan, add the cream, chicken stock and Parmesan cheese and stir until cheese is melted in, add the sun-dried tomatoes, the sauce should begin to turn an orangey colour, once this occurs, add the basil and the chicken and simmer for a few minutes until all the flavours have combined, make sure you do not let the sauce boil as this can cause a funny texture (so not appealing).
4. Stir in with desired amount and type (i use fettuccine or linguine) of pasta and serve with Italian bread and topped with Parmesan.
